The Ché (egg, bacon, Beecher's cheese, ham, bacon, pickle, apple butter, and sweet onion mustard) and a Bloody Mary.
Regardless of how much breakfast I have eaten in 33 years, I am happily still shocked when I find something so wild and delicious that it sends me in two directions: the foodgasm, and food coma.
We dropped off my car for some work and had a few hours (luckily) to kill before we could pick up, so we looked up some local spots for breakfast. Tucked in on a corner, almost completely hidden from the road, was the Seattle Biscuit Company.
When we walked in, we were immediately smacked in the face with the smell of fresh crusty biscuits floating on the cool air. The menu graced a chalkboard right inside the door, boasting a range of items with fun names and cocktails. After looking over the options (and assuming these were standard-sized biscuits) I ordered the Ché.
Holy shit was I incorrect there.
The Ché… a collossal beast of egg, bacon, Beecher's cheese, ham, bacon, pickle, apple butter, and sweet onion mustard. I am not exagerating when I say this sandwhich was as big as a baby’s head. To wash it down, I sipped a Bloody Mary made with mild spice and a large piece of okra.
Ché was sweet, tangy, and savory, accompanied by crunchy and crusty biscuit in every bite.
Given that am writing this blog post and have the empty plate above, I am both proud and shocked that I ate the entire thing. Somehow.
All I know is I'm gonna go take a very long nap now.
