Who doesn't love a fresh take on old favorites? In the case of tacos, there's always something new to try and a different way to tweak this classic. At Taco Buddha, we found a small but tight menu that changes weekly, filled with of new takes on tacos and sides.
Emily and I were invited out to lunch with the boss, and this is her latest favorite spot.
The first couple things to hit me on the menu were street corn and fried avocado; one near and dear to my heart, and the other an intriguing snack that I will now forever crave. I cannot fully describe fried avocado other than salty and crunchy on the outside, but creamy and tangy inside. Screw mozzarella sticks. Give me a full plate of this.
For my lunch, I destroyed a side of the fried avocado, a half portion of street corn on a stick, and a New Mexico Cajun Shrimp taco. My taco was filled with griddled red-chile and Cajun spice coated shrimp, romaine lettuce, jack cheese, cilantro, and jalapeño sauce. The flour tortilla also came with a lime wedge for extra bite.
